Maple Banana Muffins

We bought bananas at Costco last week and weren't able to use them all before they became over ripe. Instead of throwing them away I whipped up these easy muffins that were devoured by my girls. The original recipe called for crushed pecans on top, but my daughters go to a nut free camp, so I omitted them. The muffins came out nice and moist, but not too sweet. These are perfect for breakfast or snacks. I am gearing up to make another batch for camp this week! I like to make muffins instead of banana bread because it is easier to freeze and defrost a few muffins at a time instead cutting up an entire loaf.

Yields: 12

Ingredients:

  • 3 medium very ripe bananas
  • 1 1/4 cups white whole wheat flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 Tablespoon unsalted butter, softened
  • 1/4 cup maple sugar (or brown sugar)
  • 2 large egg whites
  • 1/4 cup pure maple syrup
  • 2 Tbsp unsweetened apple sauce
  • 1/2 teaspoon vanilla extract

  • Directions:
Preheat oven to 325°F. Line a cupcake tin with liners.

Mash bananas in a bowl, set aside. In a medium bowl, combine flour, baking soda and salt with a wire whisk. Set aside.

In a large bowl cream butter and 1/4 cup maple sugar with an electric mixer. Add egg whites, mashed bananas, maple syrup, apple sauce and vanilla; beat at medium speed until mixed well, scraping down sides of the bowl.

Add flour mixture, then blend at a low speed until just combined. Pour the batter into the prepared muffin tin.

Bake the muffins on the center rack for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.

    Baked French Toast Muffins

Breakfast is still my favorite meal of the day, except dessert of course, so it's fun to try new recipes. We rarely have french toast at home, but whenever we go out for breakfast it's something I usually order. This weekend we had family over to celebrate my mother-in-law's special birthday and I wanted to make something a little bit different as a treat. These french toast muffins didn't disappoint.

As a host, it is always nice to have dishes that can be prepared the night before so there is one less thing to worry about the day of your event. I mixed up the bread and filled the muffin tins the night before so that all I had to do in the morning was make the stresuel topping and put them in the oven. The tops had a sweet crunch while the french toast stayed nice and moist. I substituted Almond milk for a dairy allergy and no one noticed. Plus, you can enjoy the flavors of french toast without standing over a griddle all morning!

    Yields: 12

    Ingredients:
1 loaf French bread, cut or torn into 1/2 inch cubes (about 12 cups of bread)
    2 1/2 cups milk
    6 large eggs
    1/2 cup granulated sugar
    1 tablespoon vanilla extract
    1 teaspoon ground cinnamon

    For the Cinnamon Streusel Topping:
    1/4 cup cold butter
    1/4 cup light brown sugar
    1/4 cup all-purpose flour
    1/8 teaspoon ground cinnamon
    Pinch of salt

    Directions:
    1. In a medium bowl, whisk together the milk, eggs, sugar, vanilla, and cinnamon.

    2. Grease a 12 cup muffin tin. Add about 1 cup of bread cubes to each muffin cup. Carefully pour egg and milk mixture evenly over each muffin tin. You may need to press down on the bread cubes after you pour a little mixture and then pour more. Pour slowly or you will have a mess. Or you can combine everything in a large bowl and then fill the muffin cups. Cover the muffins with plastic wrap and refrigerate for 2 hours or up to overnight.

    3. When ready to bake, preheat the oven to 350 degrees F. To make the cinnamon streusel, in a small bowl, combine butter, brown sugar, flour, cinnamon, and salt. Mix together with your hands, until you have a crumbly mixture. Remove the muffins from the refrigerator and sprinkle the muffins evenly with the streusel topping.

    4. Bake for 25 minutes or until tops are golden brown. Let muffins cool for 5 minutes. Remove from pan and serve with butter and maple syrup, if desired.

    Whole Wheat Oatmeal Muffins

One of the things I dreamt about was being able to cook with my child. Now that day is here and my daughter loves to "help" cook. She pulled up a chair and helped put the muffin liners in the tin and mix all of the dry ingredients into the bowl. As she anxiously watched them bake in the oven, it was all I could do to let them cool down before she had to taste her hard work. They are truly kid and mother tested and approved. These are full of oatmeal to keep you full and not too sweet. They are also perfect to be frozen and defrosted on busy mornings.

Super Soft Whole Wheat Pumpkin Muffins

These days cooking seems to be a thing of the past or at least not trying any new recipes. This past weekend I was able to take a few minutes to whip up these whole wheat muffins for breakfast/snacks for the week. I added a Tablespoon of chia seeds for extra protein, fiber and omega 3s. They are very moist and not a strong pumpkin flavor so are perfect all year round.

Super Soft Whole Wheat Pumpkin Muffins
    Yields: 12 muffins

    INGREDIENTS:

1 1/2 cups whole wheat flour
    1/2 cup packed brown sugar
1 tsp. pumpkin pie spice (or 1/2 tsp. cinnamon, 1/4 tsp. nutmeg, 1/4 tsp. allspice)
    3/4 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    2 large eggs
    3/4 cup canned pumpkin puree
2/3 cup unsweetened applesauce (two 4-oz. cups)
    1/2 cup vegetable oil
1/3 cup chopped pecans or walnuts

    DIRECTIONS:

Preheat oven to 350 degrees F. Line a 12-cup muffin pan with paper liners and spray lightly with nonstick cooking spray.
In a large bowl, stir together whole wheat flour, brown sugar, pumpkin pie spice, baking powder, baking soda and salt. Make a well in the center and add eggs, pumpkin, applesauce and oil. Mix just until the dry ingredients are absorbed. Fill muffin cups to the top with batter. Sprinkle with chopped pecans or walnuts.*
Bake for 20-22 minutes, or until the tops spring back when lightly touched. Cool in the pan before removing from cups.
    TIPS:
You can also add the chopped nuts into the batter after mixing all other ingredients, instead of sprinkling on top.

Oh, Baby! Banana Chocolate Chip Muffins

Knowing how much I usually enjoy cooking, my sweet father-in-law bought me a book Pregnancy Cooking & Nutrition for Dummies. It mainly has healthy eating recipes with some interesting notes about ingredients that are better to have during pregnancy to help promote growth for various aspects of the baby throughout pregnancy. These muffins were a great morning snack and not too sweet. The bananas keep them nice and moist with hint of sweetness from chocolate chips. They are a great source of fiber, folate, iron, and potassium and can be enjoyed even if you aren't pregnant!

Spinach, Broccoli & Feta Crustless Quiche

It seems that lately I am struggling to get all of my veggies in for the day. An easy way I have found to help with that is by making a crustless quiche for dinner. They are pretty healthy, full of protein from the eggs and packed with veggies. This particular one I used up some frozen spinach and broccoli in the freezer, but the original called for mushrooms. You can use whatever you have on hand or your favorite vegetables, the base will remain the same. The best part is that this can be made for basically any meal. Even if you have it for dinner like us, leftovers can be eaten for breakfast, lunch or dinner the next day!
     photo SpinachampBroccoliFetaQuiche_zps67f61343.jpg
Spinach, Broccoli & Feta Crustless Quiche
    Adapted from: Tasty Kitchen
    Serves: 6

Ingredients:10 ounces, weight Frozen Spinach (defrosted and drained)
10 ounces, weight Frozen chopped broccoli (defrosted and drained)
2 ounces, weight Feta Cheese, Crumbled
    6  Eggs
    8 ounces, fluid skim Milk
⅛ cups Parmesan Cheese, Freshly Grated
    ⅛ cups Mozzarella Cheese, Shredded
    Salt And Pepper, to taste

    Directions:

Preheat your oven to 350F. If your frozen spinach and broccoli are not already thawed, thaw it in the microwave according to package instructions. Empty the box into a colander and let it drain while you begin to prepare the rest.

Spray a pie dish with non-stick spray. Squeeze the rest of the water out of the spinach and spread it out on the bottom of the pie dish. Next add the broccoli and crumbled feta.

In a medium bowl whisk together the eggs until fairly smooth. Add the milk, Parmesan and another small sprinkle of pepper. Whisk to combine. Pour this mixture into the pie dish over the spinach, broccoli and feta.

Sprinkle the shredded mozzarella cheese over the top. Place the pie dish on a baking sheet for easy transfer into the oven. Place the quiche into the preheated oven and bake until it is golden brown on top and the center is solid. Every oven is different but this should take between 45 minutes and an hour. Chocolate Chip Buttermilk Scones

Happy Sunday and St. Patrick's Day! I always forget about the holiday until I leave my house and see everyone dressed in green. Needless to say, we didn't go out and celebrate. For some reason in my mind breakfast on the weekends can be indulgent. Maybe it is because you have the time to make something different and delicious, or maybe it's as a reward for the work week. These "skinny" chocolate chip buttermilk scones are that fix. Made with whole wheat flour it gives them a little bit nuttier and denser flavor and texture but are delicious. And being under 200 calories makes it so you can feel indulgent without feeling guilty. I made these for some company that came over for coffee since I couldn't just serve a beverage without any food!

    Ingredients:

3/4 cup cold buttermilk (lowfat if possible)
    1/4 cup sugar
    2 tsp vanilla extract
    1 large egg
    1 cup all purpose flour
1 cup white whole wheat flour
    1 Tbsp baking powder
    1/2 tsp salt
3 Tbsp chilled butter (must be cold) cut into small pieces
    3/4 cup chocolate chips
    cooking spray
1 large egg white, lightly beaten
    1 Tbsp sugar

    Directions:
Preheat oven to 375°. Combine the first four ingredients in a medium bowl, stirring with a whisk. Spray baking sheet with cooking spray.

Combine flour, baking powder, salt, in a large bowl, stirring with a whisk. Cut in chilled butter with a pastry blender, or you could use 2 knives, until the mixture resembles coarse meal. Gently fold in chocolate chips. Add milk mixture, stirring just until moist.

Place dough onto a floured surface and knead lightly four times with floured hands. Form dough into an 9-inch circle onto baking sheet, about 3/4" thick. Using a knife, cut dough into 12 wedges all the way through.

Brush egg white over dough and sprinkle evenly with sugar. Bake until golden, about 18-20 minutes, depending on your oven. Serve warm.

Spinach, Mushroom & Feta Crustless Quiche

My brother and his girlfriend came to visit last weekend, and it was so great to see them and spend some time together! Of course they loved escaping the snow storm back north for the warm weather here. Whenever we have people visit we are reminded of the vacation like state we live in and take for granted. Visitors remind us to take a moment from our busy lives to sit by the pool or in the yard and just enjoy the weather.
     photo b3e94f9a-0368-4390-8a71-f04475612222_zps71e5cd7a.jpg
Another reason I enjoy company is because it gives me the perfect excuse to try out some new breakfast recipes, especially this crust-less quiche. I don't normally make frittatas or quiches because the two of us don't finish them and let's be honest I don't fuss that much in the morning. I try to only make ones that you don't have to partially cook or let set BEFORE going in the oven. The beauty of this recipe is that you only have to saute the mushrooms and then everything else is mixed up and put directly in the dish and you can forget about it while you shower, or in their case play in the pool. I also added in a bit of leftover broccoli with the spinach, so feel free to add that or any other vegetables you want to use up.

    Ingredients:
10 ounces, weight Frozen chopped spinach (defrosted and drained)
    8 ounces fresh mushrooms, sliced
    1/2 tsp garlic, minced
    2 ounces Feta cheese, crumbled
    non-stick cooking spray
1/8 cup Parmesan cheese, freshly grated
    5 large eggs
    8 ounces skim milk
    1/4 cup Mozzarella cheese, shredded
    salt & pepper to taste

    Directions:
Preheat your oven to 350 degrees. If your frozen spinach is not already thawed, thaw it in the microwave. Empty the box into a colander and let it drain while you begin to prepare the rest.

Quickly rinse the mushrooms and slice them thinly. Place the sliced mushrooms in a skillet coated with non-stick spray, add the minced garlic, and sprinkle a little salt and pepper. Turn the heat on to medium-high and saute the mushrooms until they release all of their moisture and no more water remains on the bottom of the skillet (5-7 minutes)

Spray a pie dish with non-stick spray. Squeeze the rest of the water out of the spinach and spread it out on the bottom of the pie dish. Next add the cooked mushrooms and crumbled feta.

In a medium bowl whisk together the eggs until fairly smooth. Add the milk, Parmesan  and another small sprinkle of pepper. Whisk to combine. (This step can be completed while the mushrooms are cooking) Pour this mixture into the pie dish over the spinach, mushrooms, and feta.

Sprinkle the shredded mozzarella cheese over top. Place the pie dish on a baking sheet for easy transfer into the oven. Place the quiche into the preheated oven and bake until it is golden brown on top and the center is solid. Every oven is different but this should take between 45 minutes. Pumpkin Chocolate Chip Muffins

Happy Friday!! You survived another work week and can now enjoy the weekend. I hope you have some fun holiday plans for the weekend, whether it be holiday shopping or a party!
    Photobucket

I am trying to break a habit of purchasing muffins or breads from coffee shops like Starbucks and Panera. Besides the fact that they are a rip off and most likely not that good for you, I can make something even better tasting and healthier at home. I have a bit more time now and am trying to bake what I can and freeze them in ready to go bags to prevent a last minute stop/purchase out of hunger. My latest batch were seasonal pumpkin chocolate chip muffins. Anything with pumpkin is good in my book and helps to keep the muffins nice and moist. I love the mini chocolate chips because they distribute better in the muffin and don't overpower it with chocolate flavor. By using whole wheat flour you get in a bit more fiber, but I want to try using some applesauce instead of oil to make them even better for you.

    NY Style Crumb Cake

Anyone who is from the tri-state area knows what I am talking about when I refer to New York style crumb cake. It has a soft white cake bottom and is piled high with addicting brown sugar crumbs on top. Luckily, there are a ton of New York style deli's in Florida where we can get our fix without taking a flight. However, my father-in-laws birthday is this week and crumb cake is one of his favorites. I had never made one before but figure this was a pretty good reason to try. Now I say that it yields 9 pieces because sometimes you just have to have more than 1 piece. This recipe is originally from Cooks Illustrated who can pretty much master anything and they definitely did here. The crumbs were sweet and crumbled off while the cake was still moist and delicious. I was lucky to get even a picture in before it was all gone :) We ate it for dessert but is also perfect in the morning with coffee or tea.

    New York Style Crumb Cake
Source: Brown Eyed Baker originally Cooks Illustrated
    Yields: 9 pieces

    Ingredients:
    For the Crumb Topping
    1/3 cup granulated sugar (2 2/3 ounces)
1/3 cup dark brown sugar (2 2/3 ounces)
    3/4 teaspoon ground cinnamon
    1/8 teaspoon table salt
8 tablespoons unsalted butter (1 stick), melted and still warm
    1 3/4 cups cake flour (7 ounces)

    For the Cake
    1 1/4 cups cake flour (5 ounces)
    1/2 cup granulated sugar (3 1/2 ounces)
    1/4 teaspoon baking soda
    1/4 teaspoon table salt
6 tablespoons unsalted butter (3/4 stick), cut into 6 pieces, softened but still cool
    1 large egg
    1 large egg yolk
    1 teaspoon vanilla extract
    1/3 cup buttermilk
    Confectioners' sugar for dusting
    Directions:
To make the Topping: Whisk sugars, cinnamon, salt, and butter in medium bowl to combine. Add flour and stir with rubber spatula or wooden spoon until mixture resembles thick, cohesive dough; set aside to cool to room temperature, 10 to 15 minutes.
To make the Cake: Adjust oven rack to upper-middle position and heat oven to 325 degrees. Cut 16-inch length parchment paper or aluminum foil and fold lengthwise to 7-inch width. Spray 8-inch square baking dish with nonstick cooking spray and fit parchment into dish, pushing it into corners and up sides; allow excess to overhang edges of dish.
    3. In bowl of standing mixer fitted with paddle attachment, mix flour, sugar, baking soda, and salt on low speed to combine. With mixer running at low speed, add butter one piece at a time; continue beating until mixture resembles moist crumbs, with no visible butter chunks remaining, 1 to 2 minutes. Add egg, yolk, vanilla, and buttermilk; beat on medium-high speed until light and fluffy, about 1 minute, scraping once if necessary.
    4. Transfer batter to baking pan; using rubber spatula, spread batter into even layer. Following photos below, break apart crumb topping into large pea-sized pieces and spread in even layer over batter, beginning with edges and then working toward center. Bake until crumbs are golden and wooden skewer inserted into center of cake comes out clean, 35 to 40 minutes. Cool on wire rack at least 30 minutes. Remove cake from pan by lifting parchment overhang. Dust with confectioners' sugar just before serving.

Note: Don't be tempted to substitute all-purpose flour for the cake flour, as doing so will make a dry, tough cake. If you can't find buttermilk, you can substitute an equal amount of plain, low-fat yogurt. When topping the cake, take care to not push the crumbs into the batter. This recipe can be easily doubled and baked in a 13 by 9-inch baking dish. If doubling, increase the baking time to about 45 minutes. Cooled leftovers can be wrapped in plastic wrap and stored at room temperature for up to 2 days.

    Pumpkin Nut Muffins

Living in Florida it is hard to have it feel like fall, especially since we are still wearing shorts. There was a "cold front" and I use the term extremely loosely, so we could at least open our windows and cool down a bit. I took full advantage and tried to pretend it was fall. And what better way to do that than through food?! To me fall flavors are apples, pears and pumpkin, and this recipe was a healthy spin on a pumpkin muffin. When I was mixing all of the ingredients together it smelled just like pumpkin pie and reminded me of the holidays. The pecans add a little crunch to the muffins. Be sure to spray the muffin liners, I was hesitant and the muffins got a bit stuck to the paper :( Otherwise, these are a great healthy fall treat that you can eat on the go or relaxing with your morning coffee or tea.

    Serves: 12

    Ingredients:
1/2 cup white whole wheat flour
3/4 cups unbleached all purpose flour 3/4 cup raw sugar
    1 tsp baking soda
    2 tsp pumpkin pie spice
    1/4 tsp nutmeg
    1/4 tsp cinnamon
    1/4 tsp salt
1 1/2 cups canned pumpkin (not pumpkin pie filling)
    2 tbsp vegetable oil
    2 large egg whites
    1 1/2 tsp vanilla extract
    baking spray
    1/2 cup chopped pecans

    Directions:
Preheat oven to 350°. Line a muffin tin with paper liners and lightly spray liners with oil for easy removal.

In a medium bowl, combine flours, sugar, baking soda, pumpkin spice, nutmeg, cinnamon, and salt with a wire whisk. Set aside.

In a large bowl mix pumpkin puree, oil, egg whites and vanilla; beat at medium speed until thick. Scrape down sides of the bowl.

Add flour mixture to the wet mixture, then blend at low speed until combined; do not over mix. Fold in chopped nuts.

Pour batter into prepared muffin tin and bake on the center rack for 24 - 26 minutes, or until a toothpick inserted in the center comes out clean.

Let them cool at least 15 minutes before serving. Makes 12 muffins.

    Challah French Toast

By now you probably know that breakfast is pretty much my favorite meal, except of course dessert. Since the Jewish holidays started this week, we had a challah in the house and what better way to use it up than with french toast. Normally Jason is in charge of breakfast but not french toast so this was my treat for us. This is perfect for weekend brunch! I just might have to make this again next week after another holiday dinner, if there is any challah left over. Hope you enjoy it as much as we do.

    Challah French Toast
    Serves: 8 slices
    Adapted from: Barefoot Contessa

    Ingredients:
    6 extra-large eggs (I used egg beaters for 2)
    1 1/2 cups skim milk
    1 teaspoon grated lemon zest
    1/2 teaspoon pure vanilla extract
    1 Tablespoon good honey
    1/2 teaspoon kosher salt
1 large loaf challah or brioche bread
    Vegetable oil

    Directions:
Preheat the oven to 250 degrees F.

In a large shallow bowl, whisk together the eggs, milk, lemon zest, vanilla, honey, and salt. Slice the challah in 3/4-inch thick slices. Soak as many slices in the egg mixture, turning once.

Heat griddle over medium heat. Add the soaked bread and cook for 2 to 3 minutes on each side, until nicely browned. Place the cooked French toast on a sheet pan and keep it warm in the oven. Cook the remaining soaked bread slices, until it's all cooked. Serve hot with fresh fruit and enjoy!

    Low Fat Banana Bread

With Tropical Storm Isaac in town we were stuck in the house for most of the weekend with heavy rain and wind. Hope everyone else is safe and sound and not as bored as we are. What better to do than some baking to keep busy AND use up the brown bananas. I like that the recipe used applesauce instead of butter and it kept the bread nice and moist. Now I spoiled the low-fat and added chocolate chips but you could use the recommended chopped walnuts for a crunch. This made a great breakfast and snack during the day, assuming we don't devour it before then.
